I installed your module on the website of two customers who are receiving many spam emails.

Could you please confirm which version of the JD Simple Contact Form you are using and please provide a screenshot or a link to the site as to what exactly the error is so we can help you specifically.

Hey Cesare77 are you using Google CAPTCHA_RECAPTCHA V2.0?
There have been huge amounts of exploit bots hitting sites recently and I have found that enabling V2.0 RECAPTCHA is the best solution, you can create youir site keys here: https://www.google.com/recaptcha/intro/v3.html
Just install the plugin if not in your plugins, then use the link above to create your keys and insert them into the plugin on your site and enable, then just go to global config in your Joomla admin and set the CAPTCHA_RECAPTCHA as your default.
I have found this to be the most robust way to prevent form field exploits.
It's annoying and hard to combat, also ensure you are using an encrypted SSL and make sure your site is up-to-date with all your extensions, etc.
